This is not really a formal recipe and can be adapted for whatever you have on hand.
Bell pepper, diced
Cooked beans (preferably black or pinto)
Corn (frozen is fine, just heat it in the microwave)
Preheat oven to 350 degress F. Slice tortilla(s) into strips, toss with some canola oil and salt. Spread strips in a single layer on a baking sheet. Bake until brown and crispy.
Toss all ingredients in a bowl.
